Time to prepare: About 45 minutes
1 pound bacon, cut into 1" pieces.
1-2 potatoes, diced
1 onion, diced
Salt and pepper to season potatoes and eggs
12 eggs, beaten with a whisk
Grated sharp cheddar cheese (optional)
Fresh salsa to serve (optional)
1. Cook bacon. When cooked, remove from pan and set aside.
2. Cook potatoes and onions in bacon drippings.
3. Add beaten eggs to potatoes, season with salt and pepper and cook 1 minute.
4. Add bacon pieces and cook until eggs are set.
Serve topped with grated cheddar cheese and fresh salsa if desired.
